Choosing mutton is a celebration of traditional farming and a more natural way of eating. Before modern farming placed an emphasis on young lamb, mutton was a staple of the British table, making full use of sheep that had lived a productive life. With its deeper, richer flavour and generous marbling, mutton offers an authentic taste of Britain's farming heritage, one that is well worth rediscovering. Simply cook it as you would lamb, allowing a little extra time for the roasting and braising cuts to unlock their full flavour and tenderness.

This product is a true representation of half a mutton carcase and has a minimum weight of 16kg.

• 2 to 4 x Chump Steaks
• Up to 11 Chops (loin and rib)
